This delightful snack is known by different names in different places due to the regional variations found across India. In the states of MP and AP, it is known as pani puri.
What is in pani puri ?
- Chickpeas cooked in pani puri,
- White pea mixture
- Bite-sized treats filled with sprouts
- All of the above are included.
All these are dipped in thick and spicy pani.
What is pani puri called in northern states ?
In northern states this pani puri is known as gol gappe or gol gappa.
But here, the potato and chickpea-filled treat is dipped in jaljeera-flavored water.
But in West Bengal and parts of Bihar and Jharkhand, it is known as Puchkas or Phuchkas. But here tamarind pulp becomes the essential ingredient for this variation.
According to the Puranas, according to the ancient epic Mahabharata, Pani Puri is said to have been invented by Draupadi, a newly wed, when she was challenged (with her limited resources) to feed five men.
- Leftover aloo sabji (ie potatoes and vegetables)
- Small amount of wheat flour
- Using the above, Draupadi displayed her creativity.
- She stuffed small pieces of fried dough with a potato and vegetable mixture. So that’s when Pani Puri was born.
